Sometimes you just need pancakes!

As the weather cools down, I find myself craving something warm and sweet with breakfast: pancakes. I absolutely love this recipe because it makes a hearty serving that is full of protein, so it sticks with you until lunch. I love to top these with almond butter drizzle and some berries, but you do you!


PROTEIN Pancakes:

1/2 cup low-fat cottage cheese

8 ounces egg whites

1/2 cup Kodiak Cake Flapjack mix

Dash of vanilla if you are feeling fancy


Throw this all in a blender and blend until smooth. Grill up like regular pancakes, OR pour in a glass dish sprayed with nonstick spray and bake at 350 until a toothpick comes out dry (about 30 minutes, but keep an eye on it!). I like to make a triple batch of this so I can have breakfast ready to throw in my lunchbox for early days at the surgery center. If you make a triple batch, use a 9x13 pan and back for 55 minutes.
