Sometimes I just need something chocolatey. I love this recipe because it is super chocolatey AND super balanced. I like to top it with a drizzle of almond butter and chopped bananas, but you can top it however you like! This is best warm, and reheats great in the microwave.
Chocolate Peanut Butter Baked Oatmeal - 8 servings
*Macros per serving: Carbs 20, Protein 26, Fat 13
Ingredients:
1.5 cup uncooked oatmeal
1 cup almond flour (or coconut flor or whole wheat flour- you do you!)
4 scoops whey protein powder (chocolate adds great flavor)
1/2 cup cocoa powder
1.5 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon (optional!)
1 cup 4% plain greek yogurt
1/2 cup unsweetened vanilla almond milk (swap out for any milk)
1/2 cup water
2 large eggs
1 teaspoon vanilla
3 tablespoons melted coconut oil
Instructions:
-Preheat oven to 375 F and grease an 8x8 pan with nonstick spray
-Mix dry ingredients in large mixing bowl
-Whisk together we ingredients in separate bowl
-Mix together wet and dry ingredients - be careful not to over-mix
-Pour into baking pan and bake for 45 minutes or until knife inserted into middle comes out clean. The top will turn a beautiful chocolatey brown.
-Cool for 15 minutes and enjoy!
